A Good Spin on the classic Genovese pesto pasta - but make it gut loving, gluten free, deliciously high in fibre & plant protein plus packing in a HEAP of fresh basil flavour. Oh - and make it as brothy as you wish!
Plum & hazelnut torte (gf)
My take on the iconic New York Times Cooking recipe by Marian Burros - but gluten & refined sugar free, with some added nuts for more goodness.
Anti-inflammatory super seed loaf
I could use so many different adjectives for this loaf - super, amazing, splendid - but of course the one that you care most about is ‘delicious’ - and it is!
This anti-inflammatory, gluten & dairy free loaf is dense, filling and lends itself to both sweet & savoury toppings. A little really goes a long way and your gut will thank you for all the goodness you’ve just given it 🍞
Cheesymite Scruffins
Savoury, gut-friendly and completely delicious? Say hello to my Cheesy-mite Scruffin. Not quite a scroll, not quite a muffin.
This is the perfect lunchbox situation as its energy-rich and full of only clean ingredients. Easy to make too!!
Lemon & yoghurt mini loaves with yoghurt icing
Here we go again! Its ‘back to school/work’ time and rather than scrambling to find good quality & healthy store-bought snacks to throw in the lunch box - try making these super simple, nutrient dense and DELICIOUS lemon yoghurt mini loafs with yoghurt icing. They freeze perfectly so you can make big batches to keep on hand for play dates and birthday parties.
Oven-baked chicken shawarma
This prep-ahead Chicken ‘Shawarma’ is the perfect batch meal as you can quickly cover the chicken in the marinade and then pop in the fridge or freezer to get out to cook in a jiffy on a busy night. While it’s in the oven, all you need to do is cut up a few salad veggies, throw together the yoghurt sauce and maybe heat some pita bread - but knowing you, this would already have been done - you clever thing 😉
Mediterranean style slow roasted chicken with buttery tomatoes, olives & oregano
This roast chook has SO much flavour and is a real crowd pleaser - best reserved for when you have a little more time on the weekend as its cooked a little slower to make sure the tomatoes are jammy while keeping the skin crispy.
Taco night - but make it Middle Eastern 🇱🇧
This is my take on an easy, family-friendly Middle Eastern inspired feast that works a lot like Taco night. its choose your own adventure and my mob love it. Its eating across the rainbow in the very best, most delicious way.
Nut, date & chocolate slice
This pretty little recipe by Fatimah Omran is one she made for her family during Ramadan when she got sick of eating dates, but also wanted to use the excess she had in her house.
So rich and nutrient-dense - you only really need a little bit to hit the spot with your morning coffee or afternoon cuppa.
Lebanese-inspired bean salad
I’ve been making ‘Dense Bean Salads’ since well before the lovely Violet Witchel coined the term (they’re now a viral Tik Tok trend).
Whatever you call them, these bean salads are such an amazingly delicious way to cram a heap of fibre, protein and nutrients into your day and a total breeze to throw together.
Lamb kofta with whipped feta & yoghurt dip
These kofta are fabulous entertaining food as they’re easy to whip up in advance and great for a crowd. Punchy middle-Eastern flavours that you can dial up or down depending on your guests, which pairs beautifully with the whipped feta situation for creaminess and zest.
Choc-full-of-veg Muffins
Choc-full-of-veg-muffins are your next lunchbox power move.
Gluten free, dairy free, more or less refined sugar free but ABSOLUTELY NOT flavour free - these nutritious little beauties will leave you wondering how its even possible they taste this good. Best eaten straight out of the oven.
Nacho usual (boring) kale salad
This is nacho usual kale salad. Bold, bright and full of flavour, it’s everything you love about Mexican food — smoky spices, creamy avocado, crunchy tortilla chips — wrapped up in one nutrient-dense bowl.
