Butter Chicken Wings

When you feel like chicken wings but you also feel like Indian food - this one is for you. Perfect for Friday night footy on the couch ✨

INGREDIENTS

Marinade

1/4 cup greek yoghurt (unsweetened, full fat)

1 packet of Mingle Butter Chicken Seasoning (or 1tbsp each turmeric, garam masala & cumin)

1 tsp cayenne pepper or ground chilli (optional)

Juice & rind of 1 lemon

2 cloves garlic, crushed

1cm knob ginger, finely grated (optional)

Big pinch salt

Butter chicken sauce

2 tbsp butter, cubed

150ml coconut cream

150ml passata

1-2 tsp raw sugar

salt & pepper

Yoghurt mayo & lime dressing

½ cup greek yoghurt

1-2 tbsp mayo

Juice 1 lemon

S&P

To serve Lemon cheeks, spring onion, cold cucumbers and little gem/baby cos, naan & roti

METHOD

Preheat oven to 220 degree Celcius.

Combine all marinade ingredients in a bowl and add to the chicken, coat well. Leave to marinate anywhere from 10 minutes to 10 Hours - but no longer or the yoghurt can make the chicken a weird texture.

Once marinated, place wings into a roasting dish and bake for 30 mins and nicely browned.

While cooking, place into a small saucepan the butter, passata, sugar and coconut cream and season. Stir until well incorporated and then throw this all over the chicken wings making sure they’re well coated.

Place wings back in the oven for 15 mins and remove when nicely browned and caramelised. Serve with sliced spring onion and lemon cheeks and your choice of sides and accompaniments.
