An LCM Bar went on a health retreat…
This is my take on the infamous LCM Bar. but it is made of only real, clean ingredients your grandma would actually recognise ✨
INGREDIENTS
2 cups puffed brown rice
1/2 cup gluten free rolled oats (or omit completely to keep coeliac-friendly)
1/2 cup unsweetened desiccated or finely shredded coconut
1/2 cup pepitas
1/2 cup dark choccy chips (best you can afford) or chopped up quality dark chocolate
1/2 cup dried apricots, finely chopped
2 tbsp cacao nibs
2 tbsp ground flaxseed
2 tbsp hemp seeds
1 tbsp raw cacao powder
200g honey (3/4 cup)
250g tahini (about 1 cup)
50g unsalted butter
1 tsp vanilla paste
1/2 tsp sea salt
METHOD
Grease and line slice tin and preheat your oven to 170C.
Mix dry ingredients together in a large bowl.
Combine the tahini, honey, vanilla, butter and salt in a medium saucepan set over low heat and gently stirring until well incorporated and a lovely warm, smooth paste. Don’t let it burn.
Allow to cool for five or so minutes so the chocolate chips don’t melt, then tip into the bowl of dry ingredients.
Use your hands to combine the ingredients and then place the mixture in the tin, spreading out into an even layer with your fingers.
Wet the bottom of a glass (so it doesn't stick) and use it to press the mixture down very firmly, like, you’ll want to use most of your body weight.
Bake for about 12 minutes then allow to cool completely at room temp or in the fridge before cutting into bars.
