Taco night - but make it Middle Eastern πŸ‡±πŸ‡§

Everyone loves Taco night - amiright?

Here is my Middle Eastern spin on it - so many incredible punchy flavours and a great way to use a heap of veggies in the crisper.

Its another β€˜choose your own adventure’ vibe my family love and a great way to expose them to different tastes, textures & spices that we should all be eating more of!

Hot tip - don’t skimp on the pickles - they’re essential. The turnips are stunning and you can get them at Woolies or Coles!

INGREDIENTS

Kofta mince mix:

250g each of lamb & beef mince combined with 1 grated onion (red or white, whtvr) + 2-3 cloves of crushed garlic + 1 packet of Mingle Seasoning Butter Chicken mix - all mixed together with your hands

Yoghurt Tahini sauce:

1 cup full fat greek yoghurt, 2 tbsp tahini, 2 cloves garlic crushed, good squeeze lemon juice, drizzle of EVOO & S&P

For the spread:

1 pack greek feta, crumbled

6 or so Lebanese flat bread

1 bunch each of parsley & mint + some dill, finely chopped & mixed together

Radish, thinly sliced (mandolins are the best for this - mind your fingers)

Cucumbers, cut into chunks

Baby toms (or really nice ripe toms when in season) - cut into small chunks

Spring onion, cut into small chunks

Lettuce (I like Little Gem or baby Cos) - shreaded and smaller leaves used as GF alternatives to Lebanese bread

An assortment of Lebanese style pickles including turnips, chillis and onion

Pine nuts, lightly toasted (optional)

Lemons, quartered to squeeze over everything

METHOD

Cook the mince mix in a hot pan with EVOO until all brown and crumbly. Set aside and keep warm under foil.

While its cooking, make the tahini yoghurt dressing by combining all the ingredients and mixing well together, adding more lemon juice as required for acidity. You’ll know when its right to go, just use those taste buds! Sed aside.

In a large platter place all of the salady components, then in smaller dishes pile up the chillis and the cheese. Lay out the flatbreads.

To make your β€˜taco’ - simply heat up the flatbreads in the microwave for about 30 seconds, spread on some yoghurt tahini dressing, then pile on all of your favourite parts liberally and without hesitation. Sprinkle over the pickles and dab on more dressing as you wish. Wrap it up as best you can and hook in.

*If you don’t have access to the Mingle mixes - just use about 1 tsp each of ground cumin, coriander, paprika, tumeric & allspice - plus any others that take your fancy!
