EMW || Miso marinated lamb cutlets

Perfectly marinated, deeply-flavoured cutlets ready to just tear off the bone. Enjoy with reckless abandon.

INGREDIENTS

French trimmed lamb cutlets x 8-12 (or lovely little lamb loin chops for the mere mortals!)

Marinade ingredients

1/2 tbsp smoked paprika

Handful of fresh oregano, finely chopped

4-5 cloves of garlic, freshly minced

3-4 cured anchovies

Finely grated zest of 2 lemons - but NOT the juice!

2 tbsp miso paste

Freshly grated pepper

Mix all marinade ingredients together until smooth. Throw cutlets through and give a good rub down to combine, marinate anywhere between 1 and 24 hours in the fridge - and allow to come to room temp prior to grilling.

Heat grill or BBQ to high. Grill cutlets for approx 1-2 mins per side (depending on thickness), or to your liking. Pop under loose foil for about 10 mins to rest. They should have nice char marks but also a little pink on the inside.

Serve to very lucky friends.
