Good Chocolate Slice

INGREDIENTS

2 cups dark chocolate chips (semi-sweet, the best you can afford)

1 tbsp coconut oil

80-10 medjool dates, pitted

3/4 cup smooth peanut butter

1/4 cup each pistachios, flaked almonds and macadamia pieces

(or nuts of choice)

1 tbsp each of chia seeds and pepitas

Flakey sea salt such as Olsson’s

METHOD

Line a large slice tray or square baking dish (about 10 x 10) with parchment paper.

Over low heat, melt the chocolate chips and coconut oil in a small saucepan until smooth - be careful not to burn and keep stirring with a spatula so it doesn’t catch.

Pour about ¼ of the chocolate into the bottom of the pan and spread evenly to coat the base.

Flatten then add in the dates, making sure there is very little space between each date to create another layer. Add the seeds and nuts for the third layer and then press in with the back of a spoon.

Next spread the peanut butter over the mixture - warm it up briefly for about 5-10 in the microwave if its too thick. Don’t worry too much if its a bit messy - try to just create an even layer and use a spatula if needed.

Pour the remaining chocolate over the top for the final layer - making sure everything is well covered.

Pop into the freezer for about 30-40 minutes to harden.

Once set, remove from the freezer and top with salt and slice into evenly sized bars.

Best stored in the fridge and enjoyed with a cup of tea with your favourite people.
