      <image:caption>Let’s face it, making this loaf isn’t exactly a quick process - however your gut will thank you for all the goodness you’ve given it. Because its so dense and filling, it will last quite a while in the fridge. I suggest making 2 and freezing one. Its both gluten and dairy free, plus its vegan - however it truly delivers on so many fronts and lends itself to both sweet and savoury options. My favourite way to have it is toasted (always) with a big smear of good quality butter and roasted apricots OR sliced heirloom tomato - both topped with Meredith Dairy goats fetta. Seasoned well. Chefs kiss. Be sure to start this recipe a day early and soak the buckwheat groats overnight. Also its good to leave making this recipe on a day where you have a little more time as there are quite a few (simple) steps - so being present is very helpful!</image:caption>

For me they tick all the boxes - tasty ✔️ gut friendly ✔️ easy to make ✔️ full of only clean ingredients ✔️ protein rich ✔️ energy dense ✔️ The wholemeal &amp; spelt flour combo is a little more thirsty than regular white flour - so you may need more liquid than you think. Avoid overworking the dough and add the milk bit by bit to keep it soft and pliable. I’ve used Oomite here - has all the flavour and umami of Vegemite, but without all the unnecessary additives. I didn’t give exact quantities here for the butter and Oomite in the filling as its completely up to you. Treat it though like you do your Vegemite toast and use the same butter:mite ratio here. I like a little more butter if I am honest - so thats what I did!</image:caption>

      <image:caption>I fully appreciate these look pretty rough and ready - but once they hit the lunchbox - does it even matter? So long as they taste good is all that matters at this point. Gluten-free &amp; full of flavour - pretty similar to a friand but without all the sugar. As my children refuse to eat anything without icing - I’ve topped these with greek yoghurt mixed together with maple syrup and ‘brown sprinkles’ - aka chia seeds which also help to thicken it so it stays put. You can totally use a smaller mini loaf tin that makes 6 or 8 cakes instead of the 4. These loaves are a little big for one little person so I’ve cut them in half. I borrowed my tin from a friend (thanks Nicki!) and encourage you to as well if you don’t have one. You could also use cupcake tins or just do big loaf - you just need to adjust the cooking time accordingly.</image:caption>

Its as simple as combining the marinade ingredients, adding the chicken thighs and then putting away in the freezer for a busy weeknight. Don’t worry too much about quantities of the spices, and if you are missing one or two, DM me @goodplatenutrition for sub suggestions. On the morning of day you want to enjoy it, take it out of the freezer to defrost. It only takes an hour in a lowish oven to cook. While its cooking you can prep the lemony yoghurt sauce (which doubles as both a sauce for the chicken and a salad dressing), chop the salady sides and heat the pita. Inspired by a classic recipe by one of my favourite chefs, Alison Roman, this chook is cooked a little slower to ensure the tommies are jammy but the skin gets nice and crispy. Its a wonderful late summer roast recipe where you can use overripe tomatoes and a heap of oregano. I’ve used green olives to add more texture, saltiness and fibre - and you can also use anchovies for more depth of flavour. It can be prepped and cooked in advance too - doesn’t really need to be served piping hot. A side of lemony, garlicky roasted potatoes is a must - as is a simple green salad of baby cos or little gem lettuce.</image:caption>
